A one-pan, no-fuss pancake with soft baked apples. Feels like a treat but works any morning.
Ingredients
1 apple (grated)
1 egg
3 tbsp flour (or oat flour)
2 tbsp milk
1 tsp cinnamon
1 tsp baking powder
1 tsp olive oil or butter
For Serve
Yogurt or labneh
A drizzle of tahini
Method
Mix egg, milk, and grated apple in a bowl.
Add flour, cinnamon, and baking powder.
Heat a small pan with oil.
Pour the batter and spread slightly.
Cook on low heat with lid for 6 to 8 minutes.
Flip carefully and cook another 3 minutes.
To Serve
Slice into finger-sized strips. Serve with yogurt on the side.
Texture Notes
Soft inside, lightly crisp outside. Holds shape but melts in the mouth.

Works well with pear instead of apple.
